
Well, this is the second installment of "Recipe Thursday". I hope you tried and enjoyed last week's recipe. If you are a soup and/or cheese lover, you might want to make this week's yummy feature. This recipe was featured on Paula Dean's show on the Food Network. I gave it a try and loved it.
Here are some helpful hints...I used reduced sodium/fat free chicken stock and didn't add the cayenne pepper; plus I let the soup sit overnight in the frig, so the flavors get a chance to blend. By all means try a bowl after you make it, but leave enough to try on day two. Enjoy!
Creamy Cheddar Soup (makes 4 servings)
1 small onion diced
3 TBSP butter
3 TBSP all-purpose flour
1 1/2 cups of chicken stock
1 1/2 cups cream
3/4 cups grated sharp cheddar cheese
1/2 cup green onions
salt and black pepper to taste
dash of cayenne pepper (optional)
-in a saucepan, saute onion in butter for 5-7 minutes
-blend in flour, then add stock and cream
-cook until thick
-add cheese and stir until melted
-add 1/4 cup of green onions
-add salt and pepper to taste (and cayenne pepper)
-add remaining green onions when you get ready to serve
